@ginandcrumpets - I guess hunger sometimes doesn't allow for a 2 hour cooking time and when you need a baked spud... ;-) The main thing is that it was a HAPPY meal and tasted good. Mind you, most meals are happy for me (except those Macdonald's ones *shudder*).

I sort of made this for dinner on the weekend, except I cheated and cooked the potato in the microwave first, then stuck it in the oven for 30 minutes to crisp up (I was hungry, what can I say?). It was delicious. A happy meal.

I love baked spuds for lunch as well - it is actually quite a healthy alternative even with lots of cheese!

@ginandcrumpets if only it didn't take 2 hours to prepare. Saying that, Farm, a local Farringdon lunch spot does a mean cheesy beaner (trans: baked spud w cheddar & baked beans). Now that is true exam food. You can put it all in, revise for 1.5 hours and then eat. And relax.

This is very much like the lunch I'd make every day when I was doing my school exams: a jacket potato halved, flesh scooped out and mashed with grated Cheddar, spooned back in and grilled until golden and bubbling - yum! Haven't had it for years, but like the idea of doing it again with a grown up swirl of peso.
